Recipe> Prawn Pulao

Image: Yummy Prawn Pulao

Text by: Tanya Munshi
Prawns are all time favourite seafood. You can have it as fry, curry, grilled – whatever takes your fancy. Prawn pulao is a non-vegetarian –cum- seafood lover’s delight. Along with the main course, prawn pulao can offer itself a mild flavour that gels perfectly well with accompaniments.
Personally, I would go for the raita and prawn pulao combination. The raita would be curd whipped with grated cucumber and onions and seasoned with green chillies and salt.

Ingredients:
  • 500 to 750 gms medium size prawns
  • 1 large Onion –sliced in rings
  • 1 tej patta (Bay leaf)
  • Salt – to taste
  • 1½ tsp Ginger – finely chopped
  • 1 ½ tsp Garlic – finely chopped
  • ½ tsp Turmeric
  • ½ tsp Chilli powder
  • 1-2 tbsp Cooking oil/ ghee/ butter
  • 1-2 cups of Basmati rice – cleaned and soaked
  • 1½ -2 cups of water

Method:

  1. In the wok, heat the oil/ ghee/ butter and add the bay leaf.
  2. Add the onion rings and fry till golden brown and set aside.
  3. Add the ginger, garlic and sauté it for about a minute and the prawns.
  4. Add the turmeric, chilli powder and salt and mix well.
  5. Cook the entire mixture with a lid to allow the steam cook the prawns.
  6. Ideally, the prawns should be half cooked, so that they don’t melt or crush when rice is added.
  7. Add the soaked Basmati rice and mix well. Add the water and allow the entire thing to cook in the steam.
  8. Keep checking for doneness. Taste the cooked rice; it should have enough salt that you can have it as an independent dish. But if you have accompaniments like curries then less salt in the prawn pulao is better.
  9. Serve hot, with chilled raita on the side (my choice).
  10. Or serve hot with accompaniments.

Recipes> Potatoes in Curd

Image: Boiled potatoes waiting to be dipped into a delicious curd gravy

Text by: Tanya Munshi
It’s just one of those days when you keep wondering what new to cook and you seem to run out of ideas. Then some cookbooks come in handy and the first page that you flip to is the answer to your boredom. Well, this is what I found on one such occasion –

Ingredients:
  • 4-6 Potatoes – small/ big (depending on the size and the number of people having a meal) –If the potatoes are big in size, then cut into half.
  • 1 cup Curd
  • 1 tsp Turmeric powder
  • 1 tsp Chilli powder
  • Salt – to taste
  • 1 teaspoon jeera powder (cumin)
  • 1 teaspoon Cumin seeds
  • ½ teaspoon Sugar
  • 2 Green chillies
  • ½ cup Fresh coriander leaves – chopped
  • 1 tbsp cooking oil

Method :
  1. First boil the potatoes in salt water for about 20 mins in an open pan or pressure-cook the potatoes. All this without peeling the skin of the potatoes. Drain and set aside.
  2. In a glass bowl, mix together the curd, turmeric powder, chilli powder, salt, ground cumin and sugar.
  3. In a non-stick wok, heat the oil and add the cumin seeds. Sauté for about a minute.
  4. Reduce heat and add the curd mixture and stir well.
  5. On a medium flame cook for about 2-3 minutes, cover it with a lid in between, to let it cook in the steam.
  6. Then add the fresh coriander leaves chopped and the green chillies in to the gravy and mix well.
  7. Add the peeled, halved potatoes into the mixture and allow them to cook in the gravy.
  8. Give it another 5-7 minutes of cooking and take it off the flame. Serve hot. While it can be had with chapattis, but tastes best with steamed rice.

Recipes> Pork Vindaloo

Image: Pork Vindaloo

Text by: Tanya Munshi
For a change from the normal chicken curry and rice, you can try out Pork Vindaloo, a typical Goan cuisine. If you don’t eat pork, you can try the same recipe with chicken, beef, lamb or mutton.

Ingredients:
  • 5-7 Kashmiri dry red chillies
  • half to 1 cup White Vinegar
  • 2½ teaspoons Ginger
  • 6-8 flakes Garlic
  • 1-2 sticks of Cinnamon
  • 6-8 Cloves
  • 1 tbsp Cumin seeds
  • 5 tbsp Cooking oil
  • 2-3 large Onions – finely chopped
  • 1 kg Pork (or chicken) – all cut into small bite sizes
  • ½ tsp Turmeric powder
  • Salt – to taste
  • ½ cup Water

Method:

  1. Before starting to cook, soak the Kashmiri dry red chillies in a bowl of vinegar for about 2 hours.
  2. Grind together chillies, ginger, garlic, cinnamon, cloves and cumin seeds into a fine paste.
  3. Instead of water, add the vinegar to the mixture till you use up the entire vinegar for the paste.
  4. Heat the oil in a cooker and add the onions till they are golden brown.
  5. Add the meat, ground paste, turmeric powder and salt and mix well for about 5 minutes.
    Add water and mix again.
  6. Close the cooker and bring it to a full pressure on high heat.
  7. After the first couple of whistles, reduce the heat and cook further for about 8 to 10 minutes.
  8. Switch off the gas and allow the food to cook naturally.
  9. Before serving, give it a boil and serve hot.

Visakhapatnam Restaurant Guide> Kebabri

Text by: Tanya Munshi
Kebabri, Visakhapatnam

Kebabri is probably the only North-Indian, Punjabi style kebab joint that one can find in the city. There are several other kebab/ tandoor joints, but Kebabri is the most popular, the reason – their kebabs are out of the world.

Multani kebab and mutton seekh kebabs are truly mouth melting. Each time we cross Kebabri it’s a tough time to control our hunger pangs. A meal for two should ideally cost about Rs. 400.

It's not really an ambience or a restaurant that you can call. Kebabri is situated right at the entrance of Dutt Island. Kebabri is more of an open air fast food joint, with delicious food and prompt service making it a popular choice amongst youngsters and families.

I like their garlic naan a lot; it’s loaded with garlic and coriander and made the typical tandoor style. Even if you’re a vegetarian, do drop by at Kebabri as they also have a good vegetarian menu as well.

Kochi Restaurant Guide at a glance

Text by: Tanya Munshi

Kochi Restaurant Guide at a glance

Pai Dosa
No trip to Kochi is complete without stepping into the Pai Dosa. On MG Road, just next to Sankar's book store, in a narrow lane is a little place called Pi Dosa, known for its 61 types of dosas and is mostly open beyond 12 midnight. From lahsoon dosa, egg dosa or bull's-eye dosa, it's amazing how one can be so creative with dosa. After a late night movie at Sridhar, this is where all the youngsters head to. If you're not too bothered about the ambiance, help yourself to a plastic chair and relish mammoth size dosa with mouth watering chutneys.

Upstairs
Kochi is an amalgamation of cuisines from all over India and the world. If you're looking for authentic Italian cuisine, then go to Upstairs in Fort Kochi, run by an Indian and Italian couple who take pride in serving authentic Italian cuisines.

Kasi Art Cafe
Kasi Art Cafe is a hang out place for most of the art lovers, artists and film makers. Not so much for the night life, but one must visit Kasi Art Cafe.

Fort Kochi area
Fort Kochi is also a popular place for dinners. There are plenty of ‘You buy we cook’ shacks were you can buy up fresh fish and give it to one of these shacks who will cook it for you for an extra charge.

Almost every corner of Fort Kochi has a delightful restaurant or shack. From Chariot, Salt-n-Pepper, Tea Pot, Dal Roti and of course the 'You buy we cook' shacks you will not run out of options.

Pure Vegetarian Food
For pure vegetarian food, head to Bharat Tourist Home (BTH at Wellington Island) and Dwarka(MG Road) are absolutely amazing.

North Indian Cuisines
For North Indian cuisines - head to Tandoor and Kebab House on MG Road. Tandoor is famous for its lip-smacking tava chicken and garlic naan, while Kebab House has a lovely assortment of kebabs.

Biryani
For authentic biryani, visit Kayee's opposite Exhibition Grounds for vegetarian and non-vegetarian briyani served with accompaniments.

Chinese
For Chinese, head to Chinese Dragon and The Wok on MG road.

Continental
If you're looking for burgers, sizzlers or steaks head to the Attic opposite Bay Pride Mall.

Top end restaurants and hotels
Top end restaurants and hotels that one must visit are - Hotel Casino, Taj Malabar, Avenue Regent and Avenue Centre. The buffets here are total value for money, especially if you're looking for a complete south Indian fare and want to taste a bit of everything.

Shawarmas
Visit GCDA where you can try out Shawarmas from a couple of fast food joints.

Food Court
There's an Abaad Food Court in Bay Pride Mall, which is also pretty good and has - north Indian, south Indian and Chinese cuisines on the offer. Bay Pride Mall also has a Barista and on MG Road, you can stop by for a cuppa at Cafe Coffee Day.

Coffee Shop & Lounge bars
Cocoa Tree is a popular teen hangout which is open till 12 midnight. Don’t miss out Loungevity – the pub at Avenue Regent, on MG. Both Cocoa Tree and Loungevity are owned by Avenue Regent. These are frequented mostly youngsters, tourists and naval officers and families.

Visakhapatnam Food Guide> The Park

Text by: Tanya Munshi

The Park, Visakhapatnam

The Park Hotel has a pool side open air restaurant called Aqua that serves mainly barbeques and kebabs, an indoor multi-cuisine restaurant called Vista and a South-Indian restaurant called Bamboo Bay.

Usually on Sundays, you can spend the entire day at Aqua from 11:00 am to 4:00 pm, for just Rs. 999 plus taxes, where you can have unlimited drinks (both alcohol and non-alcoholic), kebabs and barbeques and a buffet spread. You also get treated to a small head massage and can take a dip in the pool.

The ambience is amazing; it’s just that the food did not seem to be of the utmost quality as you come to know by the end of the day when you keep running to the rest room. So, it’s worth a visit once, but I would like to stay away from the Aqua Brunch as it is called at the Park for a while.

On the other hand, Vista has a buffet spread, that costs about Rs. 500/- inclusive of taxes. The good or bad mood of the chef seems to reflect in the buffet spread. There are days I wish I had simply gone for the ala carte in stead of trying out the buffet yet again.

But there are days, the buffet is really good. Ala carte is better here, if you instinctively don’t like the buffet menu. That’s what I plan to stick by, though the ala carte choices are very limited, I think its safer that way.

But if you are planning on ala carte, I recommend – Grilled Rosemary Cottage Cheese, Rosemary and Chili Lamb or Pepper Lemon Grass Beef - they are totally delicious.

The service is however very slow, somehow they seem to be taking ages to bring your cheque.

I have seen several diners (especially locals), boss their way around when they come with their families for lunch/ dinner. Maybe that is why the staff are happier while attending to foreign tourists, than the national tourists/ locals.

I recall an incident, where a friend of mine wanted to feed her 5 month old baby. We went up to the restaurant manager asking him whether there was any such arrangement for a baby room. His reply was, "Sorry Ma'am, all the rooms are full." I don't know whether the staff are trained properly at the Park Hotel, Vizag. We weren't asking for a room, we asked if there was any place we could go to, for feeding a baby. With no help from the restaurant manager, my friend had to go to the ladies rest room and feed her child and join us back for dinner.

In the hospitality industry, it is crucial that the staff be absolutely courteous and help a client if it is a genuine requirement. Sadly, this point is hugely missed at the Park Hotel, Visakhapatnam.

Visakhapatnam Restaurant Guide> Fusion Foods

Text by: Tanya Munshi

Fusion Foods , Visakhapatnam

Fusion Foods is one of my favourite restaurants, because that’s where I get the best steamed momos in Vizag. Fusion Foods has a Chinese restaurant known as the Oriental Jade Garden, a multi-cuisine Ruby International and a fast food joint.

This is by far one of the best Chinese restaurants in Vizag and the food is absolutely fantastic. Don’t miss their soups and momo combinations and we highly recommend that you work out an appetite before visiting the place. You can watch the cooks/ chef preparing the dishes from the glass window that separates the restaurant from the kitchen.

The multi-cuisine restaurant called the Ruby International is a pleasant surprise, considering the ambience. The food is perfect, the quantity more than enough and total value for money. Both these places you can enjoy a complete meal for two within Rs. 400/-.

Visakhapatnam Restaurant Guide> Dolphin Hotel

Text by: Tanya Munshi

Dolphin Hotel, Visakhapatnam

Dolphin Hotel has a roof top restaurant known as the Horizon. The Horizon is a Multi-cusine Bar & Restaurant with Live Band in Evenings. The food – is good, the quantity – miserly, the ambience – strictly okay.

Dolphin Hotel's Horizon and Green Park Hotel's Memories of China are the only two restaurants in Vizag that have a live band performing almost every night.

The food at Horizon is expensive and the quantity meager; but the quality of food is no doubt good – especially their continental spread. But for a food lover, you wish the quantity of food was directly proportional to the price. The live band is good too, but you wish they graduated to some more songs of the present than the recent yesteryears.

With too much wishing that keeps happening here, I usually skip this roof top restaurant at Dolphin Hotel.

A meal for two would cost you more than Rs. 1000/- including VAT and service charges.

Visakhapatnam Restaurang Guide> Hotel Daspalla

Text by: Tanya Munshi

Hotel Daspalla, Visakhapatnam
Now, Hotel Daspalla has a non-vegetarian and a vegetarian restaurant. Though the non-vegetarian restaurant Dakshin seems to be a popular joint amongst many locals, it’s not such a place that I would like to visit ever again, as personally for me, experiences do count towards making or marring a meal.

Firstly, when you enter this non-vegetarian restaurant it has some kind of an odd phenol smell, which makes you feel as if you are sitting inside a bathroom and eating. The lights are too dim for comfort.

We were once served cold drinks in cracked/ chipped glasses and prawn masala (which were way too dry and stale) were offered on chipped saucers and not even on side plates or quarter plates. I think this non-vegetarian section is famous for its non-veg thaalis and buffet which personally failed to excite the food lover in me.

I have seen gluttony personified in the non-vegetarian restaurant. In the buffet dinner, I have seen people pile up their plates with four to five eggs at a go, while some make their kids share from their plate (to cut the cost of ordering an extra meal). The overdose of eggs once made me exclaim loudly, "Cholestrol!" to a fellow diner, which my husband had to gently sush me down. :)

But the vegetarian restaurant Dharani at Daspalla, is completely worth it. The staff is courteous here and the food is much better. The veg unlimited thaali which will cost you only Rs. 55/- is fit for a king. For the queens, don’t be alarmed when the staff places fresh hot ghee and steamed rice in front of you to mix and eat and the stewards are absolutely stunned if you do not finish off the thaali and have at least a third helping!

Usually, there is a queue for getting a place in this vegetarian restaurant, but like most people waiting there, I am sure you wouldn’t mind the wait.

A meal for two in the vegetarian restaurant will cost Rs. 250/- including VAT and service charges.

Visakhapatnam Restaurant Guide> Bagels

Text by: Tanya Munshi

Bagels, Visakhapatnam

Bagels is a name synonymous to burgers, cakes, cookies and pastries. It’s an extremely popular joint amongst the college and office goers in Vizag. The ambience is neat, the decor is bright, in short, Bagels is a place I would like to go before a movie to chill out with friends.

Since we are frequent visitors to Bagels, we have noticed the gradual drop in quality of the food – especially the non-vegetarian puffs, croissants and the patisserie. The pastries look inviting while on display, but when you sink your teeth into what looks like a delicious walnut brownie, it doesn't really meet the expectations of a foodie.
1
Since the coffee they serve is really good, we usually don’t mind going there to grab a cuppa. For the health freaks, you can grab your style of bread from – oat bread, banana bread, whole wheat bread – you name it, they have it.
3
I always make it a point to pick up a box of ginger-raisin cookies which go well with my morning tea. It’s really neat when you have the spicy ginger and the mellow raisin blending in your mouth, with a steaming hot cup of tea on an early morning.
A snack for two will cost you within Rs. 200/-.

Visakhapatnam Restaurant Guide> 10 Downing Street

Text by: Tanya Munshi

10 Downing Street, Visakhapatnam

Well, believe it or not, but Vizag also has a 10 Downing Street and it is very good. Usually a weekend hangout for a couple of drinks and good music, this is where you can see most of the local teeny boppers and the HSBC BPO crowd hanging out with friends or having an office party.

Go for Caipiroska which is a vodka based drink and although they don’t use the original flavours it is still worth it. Their non-vegetarian platter is good, but avoid the Chicken Fry as it’s too dry on the palate. Tangdi Kebab and any other chicken kebabs are good here.

The local newspapers carry adverts on the latest Saturday night events at 10 Downing Street. Usually DJs visit from Hyderabad and play some good music here. The retro and the rock nights are amazing here.

The crowd slowly pours in past 10:30pm, so if you’re the kind who likes to sit in a pub, listen to good music with the company of friends, go there by 10ish and hang around at 10 Downing Street till you’ve had your fill.

A typical bill for drinks and snacks for two (well it depends entirely on how much you like to drink or eat), between Rs. 600 to Rs. 1000/-, including service charge.

Visakhapatnam Restaurant Guide> Sai Ram Parlour

Text by: Tanya Munshi

Sai Ram Parlour, Visakhapatnam
Okay, I’m a total dosa and idli fan and more so the garlic chutney and the delicious aromatic sambar served alongside. Where can you get it? On lazy weekends, my husband and I head straight to Sai Ram Parlour at Diamond Park.
1
Don’t go by their ambience when you reach their ground floor. It’s a place where you have to stand and have these snacks or tiffin meals as it is known in South India. You also have an option to go to the first floor and eat in the air-conditioned and the non air-conditioned restaurants. Don’t be surprised if you’re asked to share a table with other diners, it’s a perfectly done thing here considering it’s such a busy and packed restaurant. But for the food and the coffee, I don’t mind it at all. Also, don't expect any five-star treatment just because you opted for the air-conditioned restaurant, its just that you can enjoy the meals in a cooler environment.
4
But seriously, Sai Ram Parlour's dosas and idlis are simply out of the world and we really don't mind standing in the summer heat to enjoy it. A meal for two is within Rs. 200/-.
